Flambe's Chief Chef, Polash Gomes, is the muse behind the restaurants gourmet menu. Starting of his career as an executive chef at the Holiday Inn in Mumbai, Polash has worked his way across the globe, working in prestigeous restaurants, and winning numerous awards, before deciding to lead Flambe's menu.

Aside from Polash's dishes on the menu, his signature menu is one that can only be viewed and ordered from on request, subject to prior notice.
